ok you guys. this was so good. i mean, i know i’ve kinda said that about all of our cooking night dinners, but really this was damn good. four and three quarter stars good. basically our second favorite of all (number one was the sausage/tomato bowl of deliciousness over polenta). this was a simple shrimp and basil curry over polenta (apparently we REALLY love polenta). we got wild caught fresh gulf shrimp that matt lovingly shelled and de-veined at the kitchen sink while i chopped up the onion and garlic. i browned those in olive oil until soft and uber fragrant. then i added a wee bit of chicken stock and green curry paste and the shrimp and let those sauté. while i poured in the coconut milk and fish sauce and lime juice, matt prepared the polenta. then just before serving, i threw in the basil. oh man, you guys. soooooooooooooooooo delicious. oh and we paired it with a pinot grigio.
