wow. we made this amazing lamb shank stew last night and IT WAS SOOOOO TASTY. the lamb was just so lamby. it was rich, tender, flavorful and super comforting. we started by browning the lamb in the pot, then added the onion and garlic. next went in some carrots, celery and whole peeled tomatoes along with thyme and rosemary. then, we added some red wine and chicken stock and let that puppy simmer for a bit over an hour. served that over mashed cauliflower. ooooohhhhh yessssssss. and i finished the night with some rosemary infused chocolate that matt picked up for me. gahhhh, what a perfect evening of culinary delights.
