monday night during the football season is typically dedicated to eating steak, drinking wine, and watching the game. this week we decided to combine our usual MNF festivities with cooking night. this was such a warm and comforting recipe. maybe not quite as spectacular as last week’s sausage and polenta plate of dreaminess but still quite tasty. this recipe called for canned black beans, so that’s what i got. i just think that maybe the texture of the beans was a little off, like not as soft as it should have been. still, the flavors were very complementary and the bit of pimento in the mixture was a fun change. and i’m already planning my lunch of leftovers for today: black beans over a bed of greens with the chimichurri sauce drizzled on top.
